  • 1 lb ground beef
  • 1 package taco seasoning
  • ½ cup sliced black olives
  • 1012 burrito-size flour tortillas

  • 1 cup shredded cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese, divided
  • 1 cup tortilla chips, lightly crushed

Instructions

  1. Prep Veggies: Preheat oven to 350°F (175°C). Cook chopped onion and red pepper in a skillet until slightly tender. Transfer to a bowl and set aside.
  2. Brown Beef: Add ground beef to the same skillet and cook until completely browned. Drain excess grease, add taco seasoning, and prepare according to package instructions.
  3. Cut Tortillas: Stack tortillas on a cutting board. Cut away two curved sides from each tortilla, leaving a straight center section approximately 4 inches wide. Cut the center vertically into two long strips. Reserve all curved side pieces.
  4. Line Bundt Pan: Spray a Bundt pan thoroughly with nonstick cooking spray. Arrange the long tortilla strips in an overlapping fan pattern, allowing the ends to extend over the outside rim and center tube.
  5. First Layer: Sprinkle half the cheddar over the bottom tortillas, followed by half the seasoned taco meat. Cover with one-third of the reserved curved tortilla pieces.
  6. Second Layer: Add half the Monterey Jack and crushed tortilla chips. Cover with another third of the curved tortilla pieces.
  7. Third Layer: Add remaining cheddar and ground beef. Top with cooked onion, red pepper, diced jalapeño, and sliced black olives.
  8. Seal Ring: Sprinkle with remaining Monterey Jack and cover with the last third of curved tortilla pieces. Fold the long overhanging tortilla strips inward and press the surface firmly until flat and completely sealed.
  9. Bake: Bake for 45 minutes until the tortilla exterior turns golden and crisp.
  10. Invert & Serve: Cool in the pan for 15 minutes. Place a serving platter over the Bundt pan, invert them together, and carefully lift away the pan. Slice into wedges and serve warm!
