Description

Flavor packed Tofu Taco Bowls made with crispy seasoned tofu, cilantro lime rice, black beans, fresh vegetables, and creamy avocado for a satisfying plant based meal.


Ingredients

  • 14 ounces extra firm tofu, pressed and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt, divided
  • 2 cups long grain white rice (uncooked)
  • 4 cups water
  • 2 tablespoons fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded lettuce
  • 1 large avocado, sliced
  • 1/2 cup fresh salsa

Instructions

  1. Rinse the long grain white rice under cold water until the water runs clear. Cook with 4 cups water according to package instructions.
  2. Once rice is cooked, stir in fresh lime juice, chopped cilantro, and half of the salt. Fluff with a fork and set aside.
  3. Press the tofu for at least 15 minutes to remove excess moisture, then cut into even cubes.
  4. In a mixing bowl, toss tofu cubes with olive oil, chili powder, cumin, garlic powder, and the remaining salt.
  5. Heat a large skillet over medium heat and cook the seasoned tofu for 8 to 10 minutes, turning occasionally, until golden and crisp on the outside.
  6. Warm the black beans gently in a small saucepan.
  7. Prepare toppings by halving cherry tomatoes and slicing avocado.
  8. To assemble, divide cilantro lime rice among serving bowls.
  9. Top with crispy tofu, black beans, corn kernels, cherry tomatoes, shredded lettuce, sliced avocado, and fresh salsa.
  10. Serve immediately and enjoy.
