Description

Ingredients

  • 5 ounces baby spinach
  • 1 1/2 cups fresh strawberries, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/3 cup sliced almonds, toasted
  • 3 tablespoons olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Place washed and dried spinach in a large bowl.
  2. Add sliced strawberries, red onion, feta, and toasted almonds.
  3. In a small bowl, whisk olive oil, balsamic vinegar, honey, Dijon mustard, salt, and black pepper.
  4. Drizzle dressing over salad just before serving.
  5. Toss gently to coat and serve immediately.
