Description

Classic strawberry pie with fresh whole strawberries in a glossy homemade glaze inside a flaky baked crust.


Ingredients

  • 1 baked 9 inch pie crust
  • 5 cups fresh strawberries, hulled
  • 3/4 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1/2 cup water
  • 1 tablespoon fresh lemon juice
  • Whipped cream for serving, optional

Instructions

  1. Mash 2 cups strawberries and set aside 3 cups whole.
  2. Cook sugar, cornstarch, water, and mashed strawberries until thickened.
  3. Stir in lemon juice and cool slightly.
  4. Fold in whole strawberries.
  5. Fill baked crust and chill 4 hours until set.
  6. Slice and serve with whipped cream if desired.

Notes

  • Chill fully before slicing.
  • Use firm ripe strawberries.
  • Store refrigerated.
