Colorful layered cookies inspired by the classic Italian spumoni dessert, featuring chocolate, pistachio, and cherry flavors in one soft and chewy bite.

- 2 1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 2 tablespoons unsweetened cocoa powder
- 1/3 cup finely chopped pistachios
- 1/3 cup mini chocolate chips
- 1/3 cup maraschino cherries, finely chopped and patted dry
- a few drops pink food coloring
Instructions
- Preheat oven to 350 degrees F and line baking sheets with parchment paper.
- Whisk together flour, baking powder, and salt in a bowl.
- In a separate bowl, cream butter and sugar until light and fluffy. Beat in eggs, vanilla extract, and almond extract.
- Gradually mix dry ingredients into the wet mixture until combined.
- Divide dough evenly into three bowls.
- Mix cocoa powder and mini chocolate chips into the first portion.
- Mix chopped pistachios into the second portion.
- Mix chopped cherries and pink food coloring into the third portion.
- Roll each portion into equal length logs. Press the three logs together and gently roll into one combined log.
- Wrap tightly in plastic wrap and chill for at least 1 hour.
- Slice into 1/4 inch rounds and place on prepared baking sheets.
- Bake for 10 to 12 minutes until edges are lightly golden.
- Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Chill the dough thoroughly to keep the layers defined.
- Pat cherries dry to prevent excess moisture in the dough.
- Do not overbake, cookies will firm up as they cool.
- Dough can be refrigerated overnight or frozen for up to 2 months.
