Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/4 cup red onion, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Season salmon with spice mixture.
  2. Mix chickpeas, vegetables, lemon juice, and oil for salad.
  3. Sear salmon 4 to 5 minutes per side until flaky.
  4. Rest briefly and serve with salad.
