Ingredients
Scale
- 2 cups all purpose flour
- 1 teaspoon ground cinnamon
- 0.25 teaspoon ground nutmeg
- 0.25 teaspoon salt
- 0.75 cup unsalted butter, softened
- 0.5 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 0.5 cup fruit jam
- 0.25 cup powdered sugar, for dusting
Instructions
- Preheat oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.
- In a bowl, whisk together flour, cinnamon, nutmeg, and salt.
- In a separate bowl, cream softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully combined.
- Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
- Divide the dough in half, wrap tightly, and chill for at least 1 hour.
- Roll the chilled dough to 0.25 inch thickness on a lightly floured surface.
- Cut out round cookies and place on prepared baking sheets. Cut small shapes from the center of half of the cookies to create tops.
- Bake for 10 to 12 minutes until edges are lightly golden. Cool completely.
- Dust the cut-out tops with powdered sugar. Spread jam on the bottom cookies and gently press the tops over to sandwich together.
Notes
- Chill the dough well to prevent spreading.
- Do not overbake to keep cookies tender.
- Use thick jam to prevent sliding during assembly.
- Store in an airtight container for up to 5 days.
