Description
A warm and gooey cinnamon sugar cobbler inspired by classic snickerdoodle cookies, featuring a soft buttery base and a rich self forming caramel like sauce underneath.

- 1 1/2 cups all purpose flour
- 3/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup whole milk
- 1/2 cup unsalted butter, melted
- 1 cup brown sugar, packed
- 2 teaspoons ground cinnamon, divided
- 1 1/2 cups hot water
Instructions
- Preheat oven to 350 degrees Fahrenheit. Place the butter in a 9×13 inch baking dish and allow it to melt in the oven.
- In a mixing bowl whisk together flour, granulated sugar, baking powder, salt, 1 teaspoon cinnamon, and milk until smooth.
- Carefully remove the baking dish with melted butter from the oven.
- Pour the batter evenly over the melted butter without stirring. In a separate bowl combine brown sugar and remaining 1 teaspoon cinnamon, then sprinkle evenly over the batter. Gently pour hot water over the entire mixture without stirring.
- Bake for 40 to 45 minutes until the top is golden brown and mostly set with a gooey layer underneath.
- Allow the cobbler to rest for 10 to 15 minutes so the sauce thickens slightly.
- Spoon into bowls and serve warm.
Notes
- Do not stir after adding the hot water, this ensures the self saucing effect.
- Use very warm water to properly activate the sauce layer.
- Serve warm for the best gooey texture.
- Leftovers can be refrigerated up to 3 days and reheated before serving.
