Description

A warm and gooey cinnamon sugar cobbler inspired by classic snickerdoodle cookies, featuring a soft buttery base and a rich self forming caramel like sauce underneath.


Ingredients

  • 1 1/2 cups all purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup whole milk
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 2 teaspoons ground cinnamon, divided
  • 1 1/2 cups hot water

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Place the butter in a 9×13 inch baking dish and allow it to melt in the oven.
  2. In a mixing bowl whisk together flour, granulated sugar, baking powder, salt, 1 teaspoon cinnamon, and milk until smooth.
  3. Carefully remove the baking dish with melted butter from the oven.
  4. Pour the batter evenly over the melted butter without stirring. In a separate bowl combine brown sugar and remaining 1 teaspoon cinnamon, then sprinkle evenly over the batter. Gently pour hot water over the entire mixture without stirring.
  5. Bake for 40 to 45 minutes until the top is golden brown and mostly set with a gooey layer underneath.
  6. Allow the cobbler to rest for 10 to 15 minutes so the sauce thickens slightly.
  7. Spoon into bowls and serve warm.

Notes

  • Do not stir after adding the hot water, this ensures the self saucing effect.
  • Use very warm water to properly activate the sauce layer.
  • Serve warm for the best gooey texture.
  • Leftovers can be refrigerated up to 3 days and reheated before serving.
