Description

A hearty and flavorful breakfast dish that combines fluffy scrambled eggs with a rich, slightly sweet and tangy sloppy joe style ground beef mixture. Perfect served over toasted bread for a bold and satisfying start to the day.

  • 1/2 pound ground beef
  • 1 small onion, finely diced
  • 1/4 cup green bell pepper, finely diced
  • 1/2 cup ketchup
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon brown sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 large eggs
  • 2 tablespoons milk
  • 1 tablespoon butter
  • 4 toasted bread slices

Instructions

  1. Heat a large skillet over medium heat.
  2. Add the ground beef, diced onion, and green bell pepper. Cook until the beef is browned and the vegetables are soft. Drain excess fat if needed.
  3. Stir in the ketchup, tomato paste, Worcestershire sauce, brown sugar, salt, and black pepper. Simmer for about 5 minutes until the mixture thickens slightly. Remove from heat and set aside.
  4. In a bowl, whisk together the eggs and milk until smooth.
  5. In a separate skillet over low heat, melt the butter.
  6. Pour the egg mixture into the skillet and gently scramble, stirring slowly until the eggs are soft and fluffy.
  7. Fold the sloppy joe mixture into the scrambled eggs gently, or spoon it over the eggs.
  8. Serve warm over toasted bread slices.

Notes

  • Cook the eggs over low heat to keep them soft and tender.
  • Adjust the sweetness by adding slightly more or less brown sugar to taste.
  • The beef mixture can be made up to 3 days in advance and stored in the refrigerator.
