- 1/2 pound ground beef
- 1 small onion, finely diced
- 1/4 cup green bell pepper, finely diced
- 1/2 cup ketchup
- 1 tablespoon tomato paste
- 1 teaspoon Worcestershire sauce
- 1 teaspoon brown sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 4 large eggs
- 2 tablespoons milk
- 1 tablespoon butter
- 4 toasted bread slices
Instructions
- Heat a large skillet over medium heat.
- Add the ground beef, diced onion, and green bell pepper. Cook until the beef is browned and the vegetables are soft. Drain excess fat if needed.
- Stir in the ketchup, tomato paste, Worcestershire sauce, brown sugar, salt, and black pepper. Simmer for about 5 minutes until the mixture thickens slightly. Remove from heat and set aside.
- In a bowl, whisk together the eggs and milk until smooth.
- In a separate skillet over low heat, melt the butter.
- Pour the egg mixture into the skillet and gently scramble, stirring slowly until the eggs are soft and fluffy.
- Fold the sloppy joe mixture into the scrambled eggs gently, or spoon it over the eggs.
- Serve warm over toasted bread slices.
Notes
- Cook the eggs over low heat to keep them soft and tender.
- Adjust the sweetness by adding slightly more or less brown sugar to taste.
- The beef mixture can be made up to 3 days in advance and stored in the refrigerator.
- For extra richness, sprinkle shredded cheddar cheese over the top before serving.
