Instructions
- Heat a large Dutch oven over medium heat. Add olive oil and Italian sausage, breaking it apart as it cooks until browned and fully cooked.
- Add diced onion and cook for about 4 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant.
- Add white beans, chicken broth, dried oregano, salt, and black pepper. Stir well to combine.
- Bring to a gentle simmer and cook for 20 minutes to allow flavors to develop.
- Stir in chopped kale and simmer for 5 minutes until wilted and tender.
