- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees Fahrenheit and line baking sheets with parchment paper.
- Whisk together all purpose flour, cocoa powder, baking soda, and salt.
- Beat softened unsalted butter and granulated sugar until light and fluffy.
- Add egg, red food coloring, and vanilla extract. Mix well.
- Stir in buttermilk until combined.
- Gradually add dry ingredients and mix until just combined.
- Scoop dough onto baking sheets and bake for 10 to 12 minutes.
- Cool cookies completely.
- Beat cream cheese and butter until smooth. Add powdered sugar and vanilla extract and mix until creamy.
- Spread filling onto one cookie and top with another to form a sandwich.
Notes
- Do not overbake for soft texture.
- Chill dough if too soft.
- Cool cookies completely before filling.
- Store refrigerated up to 5 days.
