  • 1 cup pumpkin puree
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease a 9×5 inch loaf pan.
  2. In a bowl, whisk together all purpose flour, baking soda, salt, ground cinnamon, and ground nutmeg.
  3. In another bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
  4. Gradually combine dry ingredients with wet ingredients until just mixed.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50 to 60 minutes until a toothpick inserted into the center comes out clean.
  7. Allow the loaf to cool completely.
  8. Beat cream cheese and butter until smooth, then mix in powdered sugar and vanilla extract until creamy.
  9. Spread frosting evenly over the cooled loaf before slicing.

Notes

  • Use pure pumpkin puree, not pie filling.
  • Do not overmix the batter.
  • Refrigerate after frosting.
