- 1/4 cup brown sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 1/2 cups powdered sugar
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F and grease a 9×5 inch loaf pan.
- In a bowl, whisk together all purpose flour, baking soda, salt, ground cinnamon, and ground nutmeg.
- In another bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract until smooth.
- Gradually combine dry ingredients with wet ingredients until just mixed.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50 to 60 minutes until a toothpick inserted into the center comes out clean.
- Allow the loaf to cool completely.
- Beat cream cheese and butter until smooth, then mix in powdered sugar and vanilla extract until creamy.
- Spread frosting evenly over the cooled loaf before slicing.
Notes
- Use pure pumpkin puree, not pie filling.
- Do not overmix the batter.
- Refrigerate after frosting.
