Creamy one-pot garlic chicken made with golden chicken thighs, tender baby potatoes, and a rich garlic sauce.
Ingredients

- 6 bone-in skin-on chicken thighs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons butter
- 5 cloves garlic, minced
- 1 1/2 cups chicken broth
- 1 cup heavy cream
- 1 pound baby potatoes, halved
- 1 teaspoon fresh thyme leaves
- 2 tablespoons fresh parsley, chopped
Instructions
- Season chicken with salt and pepper.
- Brown chicken in olive oil and set aside.
- Sauté garlic in butter.
- Add broth and cream and scrape pan.
- Add potatoes and return chicken to pot.
- Cover and simmer 25 to 30 minutes.
- Garnish with parsley and serve.
Notes
- Do not burn garlic.
- Simmer gently for tender chicken.
- Store refrigerated up to three days.
