Description

Creamy one-pot garlic chicken made with golden chicken thighs, tender baby potatoes, and a rich garlic sauce.


Ingredients

Scale
  • 6 bone-in skin-on chicken thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 5 cloves garlic, minced
  • 1 1/2 cups chicken broth
  • 1 cup heavy cream
  • 1 pound baby potatoes, halved
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Season chicken with salt and pepper.
  2. Brown chicken in olive oil and set aside.
  3. Sauté garlic in butter.
  4. Add broth and cream and scrape pan.
  5. Add potatoes and return chicken to pot.
  6. Cover and simmer 25 to 30 minutes.
  7. Garnish with parsley and serve.

Notes

  • Do not burn garlic.
  • Simmer gently for tender chicken.
  • Store refrigerated up to three days.
