- 4 white fish fillets, about 6 ounces each
- 3 tablespoons Dijon mustard
- 1 tablespoon whole grain mustard
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon fresh parsley, finely chopped
Instructions
- Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
- In a small bowl, mix Dijon mustard, whole grain mustard, olive oil, minced garlic, lemon juice, salt, and black pepper until smooth.
- Place the fish fillets on the prepared baking sheet and pat them dry with a paper towel.
- Spoon or brush the mustard mixture evenly over the top of each fillet.
- Roast for 10 to 12 minutes, or until the fish flakes easily with a fork and appears opaque.
- Remove from the oven and sprinkle with freshly chopped parsley.
- Serve immediately while warm.
Notes
- Pat the fish dry before adding the mustard mixture for better adhesion and browning.
- Do not overcook, as fish can dry out quickly.
- Use fillets of similar thickness for even roasting.
- Add a pinch of smoked paprika to the mustard mixture for extra depth if desired.
