  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 large eggs

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and lightly grease a 12 cup muffin tin.
  2. In a large bowl, combine breadcrumbs and milk. Let sit for 2 minutes to absorb.
  3. Add ground beef, eggs, chopped onion, minced garlic, ketchup, Worcestershire sauce, salt, and black pepper.
  4. Mix gently until just combined, being careful not to overmix.
  5. Divide the mixture evenly among the muffin cups, filling each nearly to the top without packing tightly.
  6. In a small bowl, stir together ketchup, brown sugar, and Worcestershire sauce to make the glaze.
  7. Spoon or brush glaze over each mini meatloaf.
  8. Bake for 20 to 25 minutes, or until the internal temperature reaches 160 degrees Fahrenheit.
  9. Let rest for 5 minutes before carefully removing from the muffin tin and serving.
