- 1/4 cup granulated sugar
- 4 tablespoons unsalted butter, melted
- 16 ounces cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
Instructions
- Preheat oven to 325 degrees Fahrenheit and line a muffin tin with paper liners.
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
- In a separate bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then mix in vanilla extract and sour cream until just combined.
- Spoon about 1 tablespoon of crust mixture into each liner and press down firmly.
- Fill each liner three quarters full with cheesecake batter.
- Bake for 18 to 20 minutes until centers are just set but slightly jiggly.
- Cool at room temperature, then refrigerate for at least 2 hours before serving.
