Description

Crispy golden handheld apple pies filled with warm cinnamon-spiced apple chunks, inspired by the classic fast food favorite. Flaky on the outside and tender on the inside, these homemade pies deliver nostalgic flavor in every bite.


Ingredients

  • 2 1/2 cups (315 grams) all purpose flour
  • 1 cup (226 grams) unsalted butter, cold and cubed
  • 1/4 cup (50 grams) granulated sugar
  • 1/2 teaspoon salt
  • 6 to 8 tablespoons cold water
  • 3 medium Granny Smith apples, peeled and diced
  • 1/2 cup (110 grams) brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1 large egg, beaten for egg wash

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper.
  2. In a bowl, mix flour, granulated sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Add cold water gradually, mixing until a dough forms. Wrap and chill for 30 minutes.
  4. In a saucepan over medium heat, combine diced apples, brown sugar, cinnamon, cornstarch, and lemon juice. Cook for 5 to 7 minutes until apples soften and mixture thickens. Allow to cool slightly.
  5. Roll the chilled dough into a thin rectangle and cut into equal sized rectangles.
  6. Spoon apple filling onto half of each piece, leaving edges clear.
  7. Top with another rectangle, press edges to seal with a fork, and cut small slits on top to vent.
  8. Place pies on the prepared baking sheet and brush with beaten egg.
  9. Bake for 15 to 18 minutes until golden brown and crisp.
  10. Allow to cool for 10 minutes before serving.

Notes

  • Keep butter cold to achieve a flaky crust.
  • Seal edges tightly to prevent filling leaks.
  • Reheat in the oven to maintain crispness.
  • Freeze assembled unbaked pies for up to 2 months.
