- 2 1/2 cups (315 grams) all purpose flour
- 1 cup (226 grams) unsalted butter, cold and cubed
- 1/4 cup (50 grams) granulated sugar
- 1/2 teaspoon salt
- 6 to 8 tablespoons cold water
- 3 medium Granny Smith apples, peeled and diced
- 1/2 cup (110 grams) brown sugar, packed
- 1 teaspoon ground cinnamon
- 1 tablespoon cornstarch
- 1 teaspoon lemon juice
- 1 large egg, beaten for egg wash
Instructions
- Preheat the oven to 400 degrees F (200 degrees C) and line a baking sheet with parchment paper.
- In a bowl, mix flour, granulated sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Add cold water gradually, mixing until a dough forms. Wrap and chill for 30 minutes.
- In a saucepan over medium heat, combine diced apples, brown sugar, cinnamon, cornstarch, and lemon juice. Cook for 5 to 7 minutes until apples soften and mixture thickens. Allow to cool slightly.
- Roll the chilled dough into a thin rectangle and cut into equal sized rectangles.
- Spoon apple filling onto half of each piece, leaving edges clear.
- Top with another rectangle, press edges to seal with a fork, and cut small slits on top to vent.
- Place pies on the prepared baking sheet and brush with beaten egg.
- Bake for 15 to 18 minutes until golden brown and crisp.
- Allow to cool for 10 minutes before serving.

- Keep butter cold to achieve a flaky crust.
- Seal edges tightly to prevent filling leaks.
- Reheat in the oven to maintain crispness.
- Freeze assembled unbaked pies for up to 2 months.
