Description

Crispy matzo granola made with toasted nuts and a light honey glaze. This simple, crunchy twist on classic granola is perfect for breakfast, yogurt, or snacking.


Ingredients

  • 4 full sheets matzo, broken into bite sized pieces
  • 1 cup chopped nuts such as almonds or pecans
  • 1/3 cup honey
  • 2 tablespoons brown sugar
  • 3 tablespoons vegetable oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. In a large bowl, combine broken matzo pieces and chopped nuts.
  3. In a small saucepan, warm honey, brown sugar, vegetable oil, salt, cinnamon if using, and vanilla extract until smooth.
  4. Pour the warm syrup over the matzo mixture and toss thoroughly to coat.
  5. Spread evenly on the prepared baking sheet.
  6. Bake for 15 to 18 minutes, stirring halfway through, until golden and fragrant.
  7. Allow to cool completely on the baking sheet to crisp before breaking into clusters.

Notes

  • Stir halfway through baking to prevent burning.
  • Let cool fully before storing.
