- 4 full sheets matzo, broken into bite sized pieces
- 1 cup chopped nuts such as almonds or pecans
- 1/3 cup honey
- 2 tablespoons brown sugar
- 3 tablespoons vegetable oil
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon (optional)
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
- In a large bowl, combine broken matzo pieces and chopped nuts.
- In a small saucepan, warm honey, brown sugar, vegetable oil, salt, cinnamon if using, and vanilla extract until smooth.
- Pour the warm syrup over the matzo mixture and toss thoroughly to coat.
- Spread evenly on the prepared baking sheet.
- Bake for 15 to 18 minutes, stirring halfway through, until golden and fragrant.
- Allow to cool completely on the baking sheet to crisp before breaking into clusters.
Notes
- Stir halfway through baking to prevent burning.
- Let cool fully before storing.
- Add dried fruit or chocolate after cooling.
- Store in an airtight container for up to 1 week.
