- 3 cups mashed potatoes
- 4 cups vegetable broth
- 1 cup whole milk
- 1/2 cup heavy cream
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons unsalted butter

- 1/2 teaspoon black pepper
- 2 tablespoons fresh chives, finely chopped
Instructions
- Place a large soup pot over medium heat and allow it to warm.
- In a bowl, loosen the mashed potatoes with 1 cup of warm vegetable broth.
- Add butter to the pot and sauté the chopped onion for about 4 minutes until soft. Stir in the minced garlic and cook for 30 seconds.
- Add the mashed potato mixture to the pot and gradually pour in the remaining broth while stirring.
- Bring to a gentle simmer for 10 to 12 minutes, stirring occasionally. Add milk and heavy cream, then simmer for another 5 minutes. Season with salt and pepper.
- Blend briefly with an immersion blender if a smoother texture is desired.
- Ladle into bowls, garnish with chopped chives, and serve warm.
