  • 4 cups vegetable broth
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh chives, finely chopped

Instructions

  1. Place a large soup pot over medium heat and allow it to warm.
  2. In a bowl, loosen the mashed potatoes with 1 cup of warm vegetable broth.
  3. Add butter to the pot and sauté the chopped onion for about 4 minutes until soft. Stir in the minced garlic and cook for 30 seconds.
  4. Add the mashed potato mixture to the pot and gradually pour in the remaining broth while stirring.
  5. Bring to a gentle simmer for 10 to 12 minutes, stirring occasionally. Add milk and heavy cream, then simmer for another 5 minutes. Season with salt and pepper.
