Description

Ingredients

  • 2 pounds ground beef
  • 3/4 cup almond flour
  • 2 large eggs
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup sugar free ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup sugar free ketchup
  • 2 tablespoons brown sugar substitute
  • 1 tablespoon Worcestershire sauce

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper or lightly grease a loaf pan.
  2. In a large mixing bowl, combine ground beef, almond flour, eggs, chopped onion, minced garlic, sugar free ketchup, Worcestershire sauce, salt, and black pepper.
  3. Gently mix until just combined, being careful not to overmix.
  4. Shape the mixture into a loaf on the prepared baking sheet or press evenly into the loaf pan.
  5. In a small bowl, stir together sugar free ketchup, brown sugar substitute, and Worcestershire sauce to prepare the glaze.
  6. Spread half of the glaze evenly over the top of the meatloaf.
  7. Bake for 45 minutes.
  8. Remove from the oven and spread the remaining glaze over the top.
  9. Return to the oven and bake for an additional 15 to 20 minutes, or until the internal temperature reaches 160 degrees Fahrenheit.
  10. Let rest for 10 minutes before slicing and serving.

Notes

  • Use 80 20 ground beef for the best balance of flavor and moisture.
  • Do not skip the resting time to keep the meatloaf juicy.
  • If using a loaf pan, carefully drain excess grease halfway through baking if necessary.
  • Layering the glaze in two stages enhances flavor and texture.
