- 1 cup whole milk
- 2 tablespoons heavy cream
- 1 cup unsalted butter, softened (for frosting)
- 3 cups powdered sugar
- 2 tablespoons fresh lemon juice (for frosting)
Instructions
- Preheat oven to 350 degrees Fahrenheit. Grease and line three 8 inch round cake pans with parchment paper.
- In a bowl, whisk together flour, baking powder, and salt.
- In a separate large bowl, beat butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in lemon zest and lemon juice.
- Alternate adding the dry ingredients with the milk and heavy cream, mixing just until combined.
- Divide batter evenly among prepared pans and smooth the tops.
- Bake for 22 to 25 minutes, or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes, then transfer to racks to cool completely.
- For the frosting, beat butter until creamy. Gradually add powdered sugar and lemon juice, mixing until smooth and spreadable.
- Place one cake layer on a serving plate and spread frosting evenly on top. Repeat with remaining layers.
- Frost the outside of the cake evenly, slice, and serve.
