Description

Classic lemon curd tart with a buttery shortcrust pastry and silky smooth citrus filling. Bright, tangy, and elegant.


Ingredients

  • 1 1/2 cups all purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 2 to 3 tablespoons cold water
  • 1/2 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1/2 cup unsalted butter, cubed

Instructions

  1. Combine flour, sugar, and salt. Cut in butter until crumbly.
  2. Add egg yolk and cold water and mix until dough forms.
  3. Press into tart pan and chill 30 minutes.
  4. Bake crust at 375 degrees Fahrenheit for 15 to 18 minutes until golden.
  5. Whisk lemon juice, zest, sugar, and eggs in saucepan.
  6. Cook over medium heat until thickened, stirring constantly.
  7. Remove from heat and stir in butter until smooth.
  8. Strain curd and pour into cooled crust.
  9. Chill at least 2 hours before serving.
