- 1 1/2 cups all purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 egg yolk
- 2 to 3 tablespoons cold water
- 1/2 cup fresh lemon juice
- 1 tablespoon lemon zest
- 3/4 cup granulated sugar
- 3 large eggs
- 1/2 cup unsalted butter, cubed
Instructions
- Combine flour, sugar, and salt. Cut in butter until crumbly.
- Add egg yolk and cold water and mix until dough forms.
- Press into tart pan and chill 30 minutes.
- Bake crust at 375 degrees Fahrenheit for 15 to 18 minutes until golden.
- Whisk lemon juice, zest, sugar, and eggs in saucepan.
- Cook over medium heat until thickened, stirring constantly.
- Remove from heat and stir in butter until smooth.
- Strain curd and pour into cooled crust.
- Chill at least 2 hours before serving.
