- Ingredients for the Korean BBQ Beef:
- 1 lb thin-sliced flank steak, ribeye, or ground beef
- 3 tbsp soy sauce
- 2 tbsp brown sugar, packed
- 1 tbsp toasted sesame oil
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 1 tbsp gochujang (Korean chili paste, optional for heat)
- 1 tbsp vegetable oil (for cooking)
- Ingredients for the Garlic Butter Base:
- 2 French baguettes (about 12 inches each), ends trimmed
- 4 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- Ingredients for Assembly & Topping:
- 1 ½ cups mozzarella cheese, shredded
- 3 green onions, thinly sliced
- 1 tbsp toasted sesame seeds
- Sriracha mayo (optional, for drizzle)

- Marinate & Cook Beef: In a bowl, whisk together soy sauce, brown sugar, sesame oil, minced garlic, ginger, and gochujang. Add sliced beef and toss to coat. Heat vegetable oil in a large skillet over high heat. Add beef and cook for 5–7 minutes until fully cooked, caramelized, and slightly crispy on the edges. Remove from heat.
- Prep Bread Boats: Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Cut a V-shaped trough along the top of each baguette and hollow out the soft center to make deep boats.
- Brush Garlic Butter: Mix melted butter, 3 cloves minced garlic, and parsley. Brush generously inside and over the edges of the bread boats. Place on baking sheet and bake for 5 minutes to crisp slightly.
- Stuff Boats: Sprinkle a thin layer of shredded mozzarella into the bottom of each boat. Fill generously with the caramelized Korean BBQ beef and top with remaining mozzarella cheese.
- Bake & Broil: Bake for 10–12 minutes until cheese is completely melted and bubbly. Broil on high for 1–2 minutes until golden brown.
- Garnish & Serve: Top with sliced green onions, toasted sesame seeds, and a drizzle of spicy Sriracha mayo if desired. Slice into portions and serve hot!
Notes
- Slice beef against the grain for the most tender bite.
- Do not overcrowd the pan when cooking the beef; work in batches if needed to ensure caramelization.
- Hollow out the baguettes aggressively to create deep troughs for more filling.
- Watch the broiler closely during the final step to avoid burning the cheese.
- Let the boats cool for two minutes after baking so the cheese sets slightly.
- Always preheat the skillet until very hot before adding the beef to sear rather than steam.
- Let excess marinade drip off the beef before cooking to prevent steaming.
