Ingredients

- 1 1/2 pounds large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- 3 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons capers, drained
- 2 tablespoons fresh parsley, chopped
Instructions
- Toss shrimp with olive oil, salt, and pepper and thread onto skewers.
- Preheat grill to medium high.
- Grill shrimp 2 to 3 minutes per side until pink and opaque.
- Melt butter, add garlic, lemon juice, zest, and capers and simmer briefly.
- Brush sauce over shrimp and sprinkle with parsley before serving.
Notes
- Do not overcook shrimp.
