Description

Juicy grilled shrimp piccata skewers brushed with lemon butter sauce and topped with capers and fresh parsley.


Ingredients

  • 1 1/2 pounds large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons capers, drained
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Toss shrimp with olive oil, salt, and pepper and thread onto skewers.
  2. Preheat grill to medium high.
  3. Grill shrimp 2 to 3 minutes per side until pink and opaque.
  4. Melt butter, add garlic, lemon juice, zest, and capers and simmer briefly.
  5. Brush sauce over shrimp and sprinkle with parsley before serving.
