Description

A rustic and comforting Grilled Rhubarb Brown Betty featuring tender, lightly charred rhubarb layered beneath a golden, buttery crumb topping. This sweet and tangy dessert is baked to perfection and served warm for a cozy, nostalgic treat.

Ingredients

Scale
  • 4 cups fresh rhubarb, cut into 1-inch pieces
  • ¾ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • ½ cup unsalted butter, cold and cubed
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat the grill to medium heat and the oven to 350°F (175°C).
  2. In a bowl, toss the rhubarb with ¼ cup of the granulated sugar and the lemon juice.
  3. Place the rhubarb on the grill and cook for 3 to 4 minutes, turning once, until lightly charred but still firm. Remove and set aside.
  4. In a separate bowl, combine the all-purpose flour, brown sugar, remaining ½ cup granulated sugar, ground cinnamon, and salt.
  5. Cut in the cold unsalted butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  6. Transfer the grilled rhubarb to an 8-inch square baking dish and spread it evenly.
  7. Sprinkle the crumb mixture evenly over the rhubarb.
  8. Bake for 35 to 40 minutes, or until the topping is golden brown and the filling is bubbling.
  9. Remove from the oven and allow to rest for 10 to 15 minutes before serving.
  10. Spoon into bowls and serve warm, optionally with vanilla ice cream or whipped cream.

Notes

  • Grilling the rhubarb enhances its natural sweetness and adds a subtle smoky flavor.
  • Use cold butter to achieve a crisp, crumbly topping.
  • Allow the dessert to rest before serving so the juices thicken properly.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
