Description
A rustic and comforting Grilled Rhubarb Brown Betty featuring tender, lightly charred rhubarb layered beneath a golden, buttery crumb topping. This sweet and tangy dessert is baked to perfection and served warm for a cozy, nostalgic treat.
Ingredients
Scale
- 4 cups fresh rhubarb, cut into 1-inch pieces
- ¾ cup granulated sugar
- 1 tablespoon lemon juice
- 1 cup all-purpose flour
- ½ cup brown sugar
- ½ cup unsalted butter, cold and cubed
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
Instructions
- Preheat the grill to medium heat and the oven to 350°F (175°C).
- In a bowl, toss the rhubarb with ¼ cup of the granulated sugar and the lemon juice.
- Place the rhubarb on the grill and cook for 3 to 4 minutes, turning once, until lightly charred but still firm. Remove and set aside.
- In a separate bowl, combine the all-purpose flour, brown sugar, remaining ½ cup granulated sugar, ground cinnamon, and salt.
- Cut in the cold unsalted butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
- Transfer the grilled rhubarb to an 8-inch square baking dish and spread it evenly.
- Sprinkle the crumb mixture evenly over the rhubarb.
- Bake for 35 to 40 minutes, or until the topping is golden brown and the filling is bubbling.
- Remove from the oven and allow to rest for 10 to 15 minutes before serving.
- Spoon into bowls and serve warm, optionally with vanilla ice cream or whipped cream.
Notes
- Grilling the rhubarb enhances its natural sweetness and adds a subtle smoky flavor.
- Use cold butter to achieve a crisp, crumbly topping.
- Allow the dessert to rest before serving so the juices thicken properly.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
