Ingredients

- 3 pound chuck roast
- 1 tablespoon olive oil
- 1 packet ranch seasoning mix
- 1 packet brown gravy mix
- 1/2 cup beef broth
- 3 large carrots, cut into chunks
- 3 medium potatoes, cut into chunks
- 1 small onion, chopped
- 1/2 teaspoon black pepper
- Fresh parsley for garnish, optional
Instructions
- Preheat oven to 325 degrees Fahrenheit.
- Sear chuck roast in olive oil until browned on all sides.
- Sprinkle ranch seasoning and gravy mix over roast. Add beef broth.
- Add carrots, potatoes, and onion around roast.
- Cover and cook 3 hours until fork tender.
- Rest 10 minutes, slice or shred, and serve with gravy.
