Description

Warm fried halloumi served over fresh greens with tomatoes and cucumber, finished with a bright lemon dressing.


Ingredients

  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced

  • 2 tablespoons olive oil, divided
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Combine mixed greens, cherry tomatoes, cucumber, and red onion in a large bowl.
  2. Whisk 1 tablespoon olive oil with lemon juice, salt, and black pepper.
  3. Heat remaining olive oil in a skillet over medium heat.
  4. Add halloumi slices and cook 2 to 3 minutes per side until golden brown.
  5. Arrange warm halloumi over salad.
  6. Drizzle dressing over the top and serve immediately.
