Ingredients

- 2 cups all purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups buttermilk
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions
- Whisk together all purpose flour, granulated sugar, baking powder, baking soda, and salt in a large bowl.
- In another bowl whisk buttermilk, eggs, melted unsalted butter, and vanilla extract.
- Pour wet ingredients into dry ingredients and gently mix until just combined.
- Let batter rest for 5 minutes.
- Heat a nonstick skillet over medium heat.
- Pour 1/4 cup batter per pancake onto skillet.
- Cook until bubbles form on top, about 2 to 3 minutes.
- Flip and cook another 2 minutes until golden brown.
- Serve warm.
Notes
- Do not overmix the batter.
- Cook on medium heat for even browning.
- Freeze leftovers between parchment layers.
- Reheat in toaster or skillet.
