Description

Soft and airy buttermilk pancakes with golden edges and a tender interior, perfect for a comforting homemade breakfast.


Ingredients

  • 2 cups all purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Whisk together all purpose flour, granulated sugar, baking powder, baking soda, and salt in a large bowl.
  2. In another bowl whisk buttermilk, eggs, melted unsalted butter, and vanilla extract.
  3. Pour wet ingredients into dry ingredients and gently mix until just combined.
  4. Let batter rest for 5 minutes.
  5. Heat a nonstick skillet over medium heat.
  6. Pour 1/4 cup batter per pancake onto skillet.
  7. Cook until bubbles form on top, about 2 to 3 minutes.
  8. Flip and cook another 2 minutes until golden brown.
  9. Serve warm.

Notes

  • Do not overmix the batter.
  • Cook on medium heat for even browning.
  • Freeze leftovers between parchment layers.
  • Reheat in toaster or skillet.
