- 2 cups cooked quinoa, fully cooled
- 2 large eggs, lightly beaten
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup green onions, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Place a nonstick skillet over medium heat and allow it to warm gently.
- In a medium bowl, mix the cooled quinoa, beaten eggs, breadcrumbs, grated Parmesan, green onions, garlic, salt, and black pepper until fully combined.
- Add olive oil to the warm skillet and let it heat until shimmering but not smoking.
- Scoop about 1/4 cup of mixture and shape into a firm patty. Repeat with remaining mixture.
- Place patties in the skillet and cook for 4 to 5 minutes per side until golden brown and crisp.
- Transfer to a plate lined with paper towel to remove excess oil.
- Serve warm with salad, yogurt sauce, or in a sandwich.
Notes
- Let the quinoa cool completely before mixing to help the patties hold their shape.
- If the mixture feels too soft, chill it for 20 minutes before shaping.
- Do not overcrowd the pan to maintain crisp edges.
