Ingredients

  • 2 cups cooked quinoa, fully cooled
  • 2 large eggs, lightly beaten
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup green onions, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Place a nonstick skillet over medium heat and allow it to warm gently.
  2. In a medium bowl, mix the cooled quinoa, beaten eggs, breadcrumbs, grated Parmesan, green onions, garlic, salt, and black pepper until fully combined.
  3. Add olive oil to the warm skillet and let it heat until shimmering but not smoking.
  4. Scoop about 1/4 cup of mixture and shape into a firm patty. Repeat with remaining mixture.
  5. Place patties in the skillet and cook for 4 to 5 minutes per side until golden brown and crisp.
  6. Transfer to a plate lined with paper towel to remove excess oil.
  7. Serve warm with salad, yogurt sauce, or in a sandwich.

  • Let the quinoa cool completely before mixing to help the patties hold their shape.
