Description
Crispy pan fried gnocchi with caramelized mushrooms, garlic, and fresh parsley. A quick and comforting one pan meal.
Ingredients

- 1 pound shelf stable gnocchi
- 12 ounces mushrooms, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
- Grated Parmesan, optional
Instructions
- Heat olive oil in a large skillet over medium high heat.
- Add gnocchi in a single layer and cook until golden and crisp, turning occasionally.
- Remove gnocchi and set aside.
- Add mushrooms to the skillet and cook until browned and tender.
- Stir in garlic and cook briefly.
- Return gnocchi to the skillet and toss with mushrooms.
- Season with salt and black pepper.
- Sprinkle with parsley and Parmesan if desired. Serve immediately.
Notes
- Do not overcrowd the pan.
- Cook mushrooms until moisture evaporates.
- Reheat leftovers in a skillet for best texture.
