Description

A festive cranberry pistachio babka bread wreath with soft buttery dough, bright cranberry swirls, and crunchy pistachios. Perfect for holidays and special gatherings.


Ingredients

  • 3 cups all purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1/2 teaspoon salt
  • 3/4 cup warm milk
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup dried cranberries, chopped
  • 3/4 cup chopped pistachios
  • 1/3 cup brown sugar
  • 3 tablespoons unsalted butter, softened (for filling)
  • 1 teaspoon orange zest
  • 1 egg (for egg wash)
  • 1 tablespoon water (for egg wash)

Instructions

  1. In a large bowl, combine flour, granulated sugar, instant yeast, and salt.
  2. Add warm milk and 2 eggs. Mix until combined.
  3. Knead in 1/2 cup softened butter until smooth and elastic. Cover and let rise 1 to 1 1/2 hours until doubled.
  4. In a bowl, mix chopped dried cranberries, chopped pistachios, brown sugar, 3 tablespoons softened butter, and orange zest.
  5. Roll dough into a 12 by 16 inch rectangle.
  6. Spread filling evenly over dough.
  7. Roll tightly into a log and slice lengthwise in half.
  8. Twist the two halves together with cut sides facing up and shape into a wreath.
  9. Place in a greased 9 inch round pan, cover, and let rise 30 to 45 minutes.
  10. Whisk 1 egg with 1 tablespoon water and brush over dough.
  11. Bake at 350 degrees Fahrenheit for 30 to 35 minutes until golden brown.
  12. Cool slightly before slicing.
