A cozy fruit pie filled with tart cranberries and sweet pears, topped with a golden oat crumble and baked until bubbling and crisp.

- 1 prepared 9 inch pie crust
- 2 cups fresh cranberries
- 3 medium ripe but firm pears, peeled and sliced
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 3 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon ground cinnamon
- 3/4 cup all purpose flour
- 1/2 cup rolled oats
- 1/2 cup cold unsalted butter, cubed
Instructions
- Preheat oven to 375°F and position a rack in the center.
- In a large bowl, toss cranberries, sliced pears, granulated sugar, brown sugar, cornstarch, lemon juice, and cinnamon until evenly coated.
- Place the pie crust into a 9 inch pie dish and press into the edges.
- Spoon the fruit mixture into the crust. In another bowl, mix flour and oats, then cut in cold butter until crumbly. Sprinkle evenly over the fruit.
- Bake for 45 minutes, or until the topping is golden brown and the filling is bubbling at the edges.
- Cool on a rack for at least 2 hours before slicing.
- Slice and serve as is or with vanilla ice cream.
Notes
- Use firm pears so they hold their shape while baking.
- If the topping browns too quickly, loosely cover with foil.
- Place the pie dish on a baking sheet to catch bubbling juices.
