Description

A cozy fruit pie filled with tart cranberries and sweet pears, topped with a golden oat crumble and baked until bubbling and crisp.


Ingredients

  • 1 prepared 9 inch pie crust
  • 2 cups fresh cranberries
  • 3 medium ripe but firm pears, peeled and sliced
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 3/4 cup all purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup cold unsalted butter, cubed

Instructions

  1. Preheat oven to 375°F and position a rack in the center.
  2. In a large bowl, toss cranberries, sliced pears, granulated sugar, brown sugar, cornstarch, lemon juice, and cinnamon until evenly coated.
  3. Place the pie crust into a 9 inch pie dish and press into the edges.
  4. Spoon the fruit mixture into the crust. In another bowl, mix flour and oats, then cut in cold butter until crumbly. Sprinkle evenly over the fruit.
  5. Bake for 45 minutes, or until the topping is golden brown and the filling is bubbling at the edges.
  6. Cool on a rack for at least 2 hours before slicing.
  7. Slice and serve as is or with vanilla ice cream.

Notes

  • Use firm pears so they hold their shape while baking.
  • If the topping browns too quickly, loosely cover with foil.
  • Place the pie dish on a baking sheet to catch bubbling juices.
