Description

A bold and satisfying Copycat Chipotle Burrito Bowl layered with cilantro lime rice, seasoned grilled chicken, black beans, corn, fresh vegetables, and creamy guacamole.


Ingredients

  • 2 cups long grain white rice (uncooked)
  • 4 cups water
  • 2 tablespoons fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • 1 1/2 pounds boneless skinless chicken breast, sliced into strips
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt, divided
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1 cup shredded lettuce
  • 1 cup guacamole

Instructions

  1. Rinse the long grain white rice under cold water until the water runs clear. Cook with 4 cups water according to package instructions.
  2. Once rice is cooked, stir in fresh lime juice, chopped cilantro, and a pinch of the salt. Fluff with a fork and set aside.
  3. In a mixing bowl, toss sliced chicken breast with olive oil, chili powder, cumin, garlic powder, and half of the salt.
  4. Heat a large skillet over medium heat and cook the seasoned chicken for 6 to 8 minutes until fully cooked and lightly browned.
  5. Warm the black beans gently in a small saucepan with the remaining salt.
  6. Prepare toppings by halving cherry tomatoes and dicing red onion.
  7. To assemble, divide cilantro lime rice among serving bowls.
  8. Top with cooked chicken, black beans, corn kernels, cherry tomatoes, red onion, shredded lettuce, and a scoop of guacamole.
  9. Serve immediately and enjoy.

  • Marinate the chicken for at least 20 minutes for deeper flavor if time allows.
