- 2 cups shredded cheddar cheese
- 4 large eggs
- 1 large avocado, sliced
- 1 cup fresh salsa
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat a nonstick skillet over medium heat.
- Sprinkle about 1/2 cup shredded cheddar cheese into the skillet, spreading into a thin even circle.
- Cook for 2 to 3 minutes until melted and golden around the edges. Let set for 1 minute, then carefully remove and cool on a plate. Repeat to make four cheese rounds.
- In a separate skillet, heat olive oil over medium heat.
- Crack in the eggs and fry sunny side up. Season with salt and black pepper.
- Cook until egg whites are set but yolks remain runny.
- Place each fried egg on top of a cooled cheese round.
- Top with sliced avocado and spoon fresh salsa over each tostada. Serve immediately.
