Description

Crispy cheese frico rounds topped with sunny side up eggs, fresh salsa, and creamy avocado. A bold and satisfying breakfast or brunch option ready in just 20 minutes.


Ingredients

  • 2 cups shredded cheddar cheese
  • 4 large eggs
  • 1 large avocado, sliced
  • 1 cup fresh salsa
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat a nonstick skillet over medium heat.
  2. Sprinkle about 1/2 cup shredded cheddar cheese into the skillet, spreading into a thin even circle.
  3. Cook for 2 to 3 minutes until melted and golden around the edges. Let set for 1 minute, then carefully remove and cool on a plate. Repeat to make four cheese rounds.
  4. In a separate skillet, heat olive oil over medium heat.
  5. Crack in the eggs and fry sunny side up. Season with salt and black pepper.
  6. Cook until egg whites are set but yolks remain runny.
  7. Place each fried egg on top of a cooled cheese round.
  8. Top with sliced avocado and spoon fresh salsa over each tostada. Serve immediately.
