Description

Ultra rich and creamy Oreo cheesecake inspired by the famous Cheesecake Factory version, featuring a chocolate cookie crust, cookies and cream filling, and smooth chocolate ganache topping.


Ingredients

  • 24 chocolate sandwich cookies, crushed
  • 5 tablespoons unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1/2 cup heavy cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 12 chocolate sandwich cookies, roughly chopped
  • 1 cup semi sweet chocolate
  • 1/2 cup heavy cream for ganache

Instructions

  1. Preheat oven to 325°F.
  2. Mix crushed chocolate sandwich cookies with melted butter and press firmly into the bottom of a 9 inch springform pan.
  3. Bake crust for 10 minutes, then remove and let cool.
  4. In a large bowl, beat softened cream cheese and granulated sugar until smooth and creamy.
  5. Add sour cream and heavy cream and mix gently until combined.
  6. Add eggs one at a time, mixing just until incorporated.
  7. Stir in vanilla extract and roughly chopped cookies.
  8. Pour filling over cooled crust and smooth the top.
  9. Wrap the bottom of the springform pan in foil and place in a roasting pan. Pour hot water around the pan halfway up the sides.
  10. Bake for 55 to 65 minutes until the center is slightly set but still slightly jiggly.
  11. Turn off the oven and let cheesecake cool inside with the door slightly open for 1 hour.
  12. Remove and cool completely, then refrigerate for at least 6 hours or overnight.
  13. Heat heavy cream until hot and pour over semi sweet chocolate. Stir until smooth to create ganache.
  14. Spread ganache over chilled cheesecake and allow to set before slicing.

Notes

  • Use room temperature cream cheese for the smoothest texture.
  • Do not overmix after adding eggs to avoid cracks.
  • The water bath helps create a creamy texture and prevents cracking.
  • Chill overnight for the best flavor and clean slices.
