Description
A lighter twist on classic cacio e pepe made with sweet potato noodles, creamy cheese, and freshly cracked black pepper.
Ingredients

- 2 large sweet potatoes, spiralized
- 1 tablespoon olive oil
- 1 tablespoon unsalted butter
- 1 1/2 teaspoons freshly cracked black pepper
- 1 cup finely grated Pecorino Romano or Parmesan cheese
- 1/2 teaspoon salt
- 1/4 cup reserved cooking water
Instructions
- Heat a large skillet over medium heat.
- Add olive oil and butter until melted.
- Add sweet potato noodles and sauté 5 to 7 minutes until tender.
- Sprinkle black pepper and toss well.
- Lower heat and gradually add grated cheese while tossing.
- Add reserved cooking water a little at a time until a creamy sauce forms.
- Adjust salt and serve immediately.
Notes
- Do not overcook sweet potato noodles.
- Use freshly grated cheese for smooth melting.
- Toss continuously when adding cheese to prevent clumping.
