Description

A lighter twist on classic cacio e pepe made with sweet potato noodles, creamy cheese, and freshly cracked black pepper.


Ingredients

Scale
  • 2 large sweet potatoes, spiralized
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 1 1/2 teaspoons freshly cracked black pepper
  • 1 cup finely grated Pecorino Romano or Parmesan cheese
  • 1/2 teaspoon salt
  • 1/4 cup reserved cooking water

Instructions

  1. Heat a large skillet over medium heat.
  2. Add olive oil and butter until melted.
  3. Add sweet potato noodles and sauté 5 to 7 minutes until tender.
  4. Sprinkle black pepper and toss well.
  5. Lower heat and gradually add grated cheese while tossing.
  6. Add reserved cooking water a little at a time until a creamy sauce forms.
  7. Adjust salt and serve immediately.

Notes

  • Do not overcook sweet potato noodles.
  • Use freshly grated cheese for smooth melting.
  • Toss continuously when adding cheese to prevent clumping.
