Description

A creamy and tangy Baked Feta Pasta made with roasted cherry tomatoes, block feta cheese, olive oil, garlic, and fresh basil, all tossed with tender penne for a comforting and flavorful meal.


Ingredients

  • 2 pints cherry tomatoes (about 4 cups)
  • 8 ounces block feta cheese
  • 1/3 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 12 ounces penne pasta
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh basil, chopped

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. Place cherry tomatoes in a medium baking dish and drizzle with olive oil.
  3. Add minced garlic, dried oregano, red pepper flakes, salt, and black pepper. Toss gently to combine.
  4. Nestle the block feta cheese in the center of the tomatoes and drizzle a little more olive oil on top.
  5. Bake for 30 to 35 minutes until the tomatoes burst and the feta softens.
  6. Meanwhile, cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.
  7. Remove the baking dish from the oven and stir the feta and tomatoes together until creamy.
  8. Add the cooked pasta and a splash of reserved pasta water, mixing until evenly coated.
  9. Sprinkle with fresh chopped basil and serve warm.

Notes

  • Use block feta instead of crumbled for the best creamy texture.
  • Add reserved pasta water gradually to reach your desired sauce consistency.
  • Choose ripe cherry tomatoes for the sweetest flavor.
  • Store leftovers in the refrigerator for up to 3 days and reheat gently with a splash of water.
