A creamy and tangy Baked Feta Pasta made with roasted cherry tomatoes, block feta cheese, olive oil, garlic, and fresh basil, all tossed with tender penne for a comforting and flavorful meal.

- 2 pints cherry tomatoes (about 4 cups)
- 8 ounces block feta cheese
- 1/3 cup olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- 12 ounces penne pasta
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh basil, chopped
Instructions
- Preheat oven to 400 degrees Fahrenheit.
- Place cherry tomatoes in a medium baking dish and drizzle with olive oil.
- Add minced garlic, dried oregano, red pepper flakes, salt, and black pepper. Toss gently to combine.
- Nestle the block feta cheese in the center of the tomatoes and drizzle a little more olive oil on top.
- Bake for 30 to 35 minutes until the tomatoes burst and the feta softens.
- Meanwhile, cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain.
- Remove the baking dish from the oven and stir the feta and tomatoes together until creamy.
- Add the cooked pasta and a splash of reserved pasta water, mixing until evenly coated.
- Sprinkle with fresh chopped basil and serve warm.
Notes
- Use block feta instead of crumbled for the best creamy texture.
- Add reserved pasta water gradually to reach your desired sauce consistency.
- Choose ripe cherry tomatoes for the sweetest flavor.
- Store leftovers in the refrigerator for up to 3 days and reheat gently with a splash of water.
