Ingredients

  • 2 boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 large ripe avocado
  • 1/4 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 4 cups mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, sliced
  • Salt and pepper to taste

Instructions

  1. Heat a skillet or grill pan over medium-high heat and grease with 1 tablespoon olive oil.
  2. Season chicken thighs with salt and pepper, then cook for 5–6 minutes on each side until cooked through. Let rest, then slice thinly.
  3. In a blender, combine avocado, Greek yogurt, lemon juice, garlic, 1 tablespoon olive oil, and a pinch of salt. Blend until smooth.
  4. In a large bowl, toss mixed greens with half of the avocado dressing.
  5. Top with sliced chicken, cherry tomatoes, and cucumber.
  6. Drizzle with remaining dressing and sprinkle with freshly cracked pepper before serving.
