Description

  • 4 boneless skinless chicken thighs (about 680 grams)
  • 1 1/2 cups (180 grams) all purpose flour
  • 2 large eggs, beaten
  • 1 cup (240 milliliters) buttermilk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 2 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 1 3/4 cups (420 milliliters) milk
  • 1/3 cup (75 grams) unsalted butter, melted
  • 2 cups (480 milliliters) vegetable oil for frying
  • 1/2 cup (120 milliliters) maple syrup
  • 4 lettuce leaves
  • 8 tomato slices

Instructions

  1. Preheat waffle maker and heat vegetable oil in a deep skillet to 175 degrees Celsius.
  2. In one bowl mix flour, salt, black pepper, paprika, and garlic powder. In another bowl combine buttermilk and beaten eggs.
  3. Dip each chicken thigh into the buttermilk mixture, then coat thoroughly in the seasoned flour.
  4. Fry chicken for 6 to 8 minutes per side until golden brown and fully cooked. Remove and rest on a wire rack.
  5. Prepare waffle batter by mixing flour, baking powder, sugar, milk, melted butter, and 2 eggs until just combined.
  6. Cook waffles in the preheated waffle maker until golden and crisp.
  7. Assemble by placing lettuce and tomato on one waffle, top with fried chicken, drizzle with maple syrup, and cover with the second waffle. Serve warm.
