These Vegetarian Cabbage Rolls with a Holiday Inspired Filling are a cozy twist on a classic comfort dish. Tender cabbage leaves are wrapped around a hearty filling of rice, lentils, cranberries, and walnuts, then baked in a rich tomato sauce for the perfect blend of savory and sweet holiday flavors.

  • 1 large head green cabbage, core removed and leaves separated
  • 1 1/2 cups cooked rice
  • 1 cup cooked brown lentils
  • 1 medium onion, finely chopped
  • 1 carrot, grated
  • 1 celery stalk, diced
  • 3 cloves garlic, minced
  • 1/3 cup dried cranberries
  • 1/4 cup crushed walnuts
  • 2 cups tomato sauce
  • 2 tablespoons olive oil
  • 1/4 teaspoon ground nutmeg
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and lightly oil a large baking dish.
  2. In a skillet, heat olive oil and sauté onion, celery, carrot, and garlic until soft and fragrant.
  3. Stir in cooked rice, lentils, cranberries, walnuts, nutmeg, salt, and pepper. Mix well and remove from heat.
  4. Pour half of the tomato sauce into the bottom of the baking dish.
  5. Spoon 2 tablespoons of filling into each cabbage leaf, roll tightly, and tuck in the edges.
  6. Arrange rolls seam side down in the baking dish and pour remaining tomato sauce over the top.
  7. Cover with foil and bake for 40 minutes. Remove foil and bake for another 10 minutes until lightly golden.
  8. Garnish with fresh parsley before serving.

  • Use large, flexible cabbage leaves for easier rolling.
  • You can assemble the rolls a day ahead and bake before serving.
