- 1 large head green cabbage, core removed and leaves separated
- 1 1/2 cups cooked rice
- 1 cup cooked brown lentils
- 1 medium onion, finely chopped
- 1 carrot, grated
- 1 celery stalk, diced
- 3 cloves garlic, minced
- 1/3 cup dried cranberries
- 1/4 cup crushed walnuts
- 2 cups tomato sauce
- 2 tablespoons olive oil
- 1/4 teaspoon ground nutmeg
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C) and lightly oil a large baking dish.
- In a skillet, heat olive oil and sauté onion, celery, carrot, and garlic until soft and fragrant.
- Stir in cooked rice, lentils, cranberries, walnuts, nutmeg, salt, and pepper. Mix well and remove from heat.
- Pour half of the tomato sauce into the bottom of the baking dish.
- Spoon 2 tablespoons of filling into each cabbage leaf, roll tightly, and tuck in the edges.
- Arrange rolls seam side down in the baking dish and pour remaining tomato sauce over the top.
- Cover with foil and bake for 40 minutes. Remove foil and bake for another 10 minutes until lightly golden.
- Garnish with fresh parsley before serving.

- Use large, flexible cabbage leaves for easier rolling.
- You can assemble the rolls a day ahead and bake before serving.
