Description

A refreshing, hearty sandwich built for post-pool cravings, with roasted turkey, Swiss, crisp cucumber, juicy tomato, creamy avocado, and a zesty mayo-Dijon spread.

Ingredients

  • Whole grain sandwich bread, 8 slices
  • Roasted turkey breast, 1 cup thinly sliced
  • Swiss cheese, 4 slices
  • Cucumber, 1 medium, thinly sliced
  • Tomato, 1 large, cut into rounds
  • Romaine lettuce, 4 large leaves
  • Avocado, 1 ripe, sliced
  • Mayonnaise, 3 tablespoons
  • Dijon mustard, 1 tablespoon
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Toast the bread (optional): Lightly toast slices in a toaster or skillet if you prefer added structure.
  2. Make the spread: In a small bowl combine 3 tablespoons mayonnaise with 1 tablespoon Dijon mustard until smooth.
  3. Prepare produce: Thinly slice cucumber, tomato, and avocado. Wash and pat dry the romaine leaves.
  4. Assemble: Place bread slices on a cutting board. Spread mayo-mustard mixture edge to edge on each slice. Layer a romaine leaf, turkey, Swiss cheese, cucumber slices, tomato rounds, and avocado in balanced stacks.
  5. Season and press: Sprinkle with salt and pepper, press gently to compact the sandwich so layers hold.
  6. Wrap and chill (optional): Wrap sandwiches in parchment or plastic wrap and chill 10 to 15 minutes for a refreshing finish, or serve immediately.
  7. Slice and serve: Slice diagonally, plate, and enjoy with a cold drink and your choice of sides.

Notes

  • Toast bread lightly to prevent sogginess if you plan to prep ahead.
  • Keep wetter ingredients like tomato between cheese or lettuce to protect the bread.
  • Brush avocado with a little lemon juice to slow browning if making ahead.
  • Wrap tightly in parchment for transport to keep the sandwich intact.
