Description

This Turkey Cranberry Flatbread combines savory shredded turkey, tangy cranberry sauce, and melted cheese on a crisp flatbread base. A perfect use for holiday leftovers or a quick weeknight meal.

Ingredients

Scale
  • 1 large flatbread or 2 small flatbreads
  • 1 to 1 ½ cups cooked turkey, shredded
  • ⅓ cup cranberry sauce (whole berry preferred)
  • ¾ cup shredded mozzarella cheese
  • ¼ cup goat cheese or feta, crumbled (optional)
  • 1 tablespoon fresh thyme or parsley, chopped
  • 1 teaspoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Season the shredded turkey with a pinch of salt and pepper.
  3. Place the flatbread on the baking sheet and brush lightly with olive oil.
  4. Sprinkle mozzarella cheese evenly across the flatbread.
  5. Top with shredded turkey, then dot with cranberry sauce and goat cheese if using.
  6. Bake for 10 to 12 minutes, or until cheese is melted and edges are golden brown.
  7. Remove from oven, sprinkle with fresh herbs, and let rest for 2 minutes.
  8. Slice and serve warm.

Notes

  • Use naan, pita, or tortilla if flatbread isn’t available.
  • Don’t overload with cranberry sauce to avoid sogginess.
  • Reheat in a skillet for best texture.
  • Add crushed red pepper for a spicy twist.
