- 1 large flatbread or 2 small flatbreads
- 1 to 1 ½ cups cooked turkey, shredded
- ⅓ cup cranberry sauce (whole berry preferred)
- ¾ cup shredded mozzarella cheese
- ¼ cup goat cheese or feta, crumbled (optional)
- 1 tablespoon fresh thyme or parsley, chopped
- 1 teaspoon olive oil
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Season the shredded turkey with a pinch of salt and pepper.
- Place the flatbread on the baking sheet and brush lightly with olive oil.
- Sprinkle mozzarella cheese evenly across the flatbread.
- Top with shredded turkey, then dot with cranberry sauce and goat cheese if using.
- Bake for 10 to 12 minutes, or until cheese is melted and edges are golden brown.
- Remove from oven, sprinkle with fresh herbs, and let rest for 2 minutes.
- Slice and serve warm.

- Use naan, pita, or tortilla if flatbread isn’t available.
- Don’t overload with cranberry sauce to avoid sogginess.
