Description

This Turkey Cranberry Flatbread combines crispy flatbread with tender roasted turkey, sweet-tart cranberry sauce, caramelized onions, and melty cheese for a quick and cozy meal. Perfect for using leftovers or creating a comforting dish from scratch.

Ingredients

Scale
  • 1 large or 2 small flatbreads
  • 1 cup cooked turkey, chopped or shredded
  • 1/3 cup cranberry sauce
  • 1 medium onion, caramelized
  • 1 cup shredded mozzarella cheese
  • 1/4 cup crumbled goat cheese (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon fresh thyme or rosemary
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 425°F and line a baking sheet with parchment paper.
  2. In a skillet, sauté sliced onions in oil over medium heat until caramelized, about 15 minutes.
  3. Place flatbread on the baking sheet and brush with olive oil.
  4. Spread cranberry sauce evenly over the flatbread, then top with turkey, caramelized onions, mozzarella, goat cheese, herbs, salt, and pepper.
  5. Bake for 10–12 minutes, until cheese is melted and crust is crisp.
  6. Optional: broil for 1–2 minutes for a bubbly top. Let cool slightly before slicing.
  7. Serve warm and enjoy.

Notes

  • Use naan or pita as flatbread alternatives.
  • Add a drizzle of balsamic glaze or honey after baking for extra flavor.
  • Top with fresh arugula post-bake for a fresh, peppery finish.
