- 2 cans (5 oz each) canned tuna, drained
- 1 cup green peas (fresh or frozen, thawed)
- 3 tablespoons mayonnaise
- 2 tablespoons Greek yogurt
- 1 tablespoon lemon juice
- 1 small garlic clove, minced
- 1/4 cup chopped parsley
- 1 tablespoon chopped chives
- 4 slices cheddar cheese
- 4 slices sourdough or rustic white bread
- 2 tablespoons butter or mayonnaise (for grilling)
- Salt and pepper to taste
Instructions
- Heat a non-stick skillet or griddle over medium heat.
- In a bowl, mash the peas slightly with a fork or pulse them in a blender.
- Add tuna, mayonnaise, Greek yogurt, lemon juice, garlic, parsley, chives, salt, and pepper. Mix until creamy.
- Spread butter or mayonnaise on one side of each bread slice.
- Place cheese on the unbuttered side, add the tuna-pea mixture, top with another slice of cheese, then close the sandwich.
- Grill on the skillet, buttered side down, for 3–4 minutes per side until golden and the cheese is melted.
- Press gently with a spatula to help the cheese melt evenly.
- Slice diagonally, serve warm, and enjoy the crispy, cheesy goodness.
