Description

  • 2 cans (5 oz each) canned tuna, drained
  • 1 cup green peas (fresh or frozen, thawed)
  • 3 tablespoons mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lemon juice
  • 1 small garlic clove, minced
  • 1/4 cup chopped parsley
  • 1 tablespoon chopped chives
  • 4 slices cheddar cheese
  • 4 slices sourdough or rustic white bread
  • 2 tablespoons butter or mayonnaise (for grilling)
  • Salt and pepper to taste

Instructions

  1. Heat a non-stick skillet or griddle over medium heat.
  2. In a bowl, mash the peas slightly with a fork or pulse them in a blender.
  3. Add tuna, mayonnaise, Greek yogurt, lemon juice, garlic, parsley, chives, salt, and pepper. Mix until creamy.
  4. Spread butter or mayonnaise on one side of each bread slice.
  5. Place cheese on the unbuttered side, add the tuna-pea mixture, top with another slice of cheese, then close the sandwich.
  6. Grill on the skillet, buttered side down, for 3–4 minutes per side until golden and the cheese is melted.
  7. Press gently with a spatula to help the cheese melt evenly.
