Ingredients

  • 1 9-inch pie crust, prebaked
  • 34 large ripe heirloom tomatoes, sliced and drained
  • 1 teaspoon salt
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • ½ cup mayonnaise
  • A handful of fresh basil, chopped
  • 2 green onions, thinly sliced
  • ½ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the shredded mozzarella, cheddar, and mayonnaise until well combined.
  3. Place the prebaked pie crust on a baking sheet for easier handling.
  4. Layer half of the drained tomato slices into the crust. Sprinkle with salt, pepper, and basil. Spread half of the cheese mixture on top. Repeat the layers.
  5. Top with green onions and additional basil.
  6. Bake for 30 to 35 minutes until golden and bubbly.
  7. Let the pie rest for 10 to 15 minutes before slicing.
