Description

This Southern-style tomato pie is packed with fresh tomatoes, creamy mayo-herb filling, and gooey cheese, all baked in a flaky crust for the ultimate comfort dish.


Ingredients

  • 1 9-inch pie crust
  • 4 large ripe tomatoes, sliced
  • 1 teaspoon salt
  • 1/2 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup chopped fresh basil
  • 2 green onions, sliced
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F and place a baking sheet on the middle rack.
  2. In a bowl, mix mayonnaise, cheddar, mozzarella, basil, green onions, and black pepper until smooth.
  3. Press pie crust into a 9-inch pie dish, prick with a fork, and par-bake for 10 minutes.
  4. Layer sliced tomatoes in the crust. Sprinkle with salt and let sit for 10 minutes, then pat dry.
  5. Add another layer of tomatoes and spread the cheese-mayo mixture evenly on top.
  6. Bake for 30 to 35 minutes until golden and bubbly.
  7. Let cool for 10–15 minutes before slicing. Serve warm or at room temperature.

Notes

  • Use firm tomatoes to prevent excess moisture.
  • Drain and pat dry tomatoes before layering.
  • Allow pie to rest before slicing for clean pieces.
  • Add breadcrumbs on top for extra crunch if desired.
