Description

A creamy, chilled Taiwanese sesame noodle dish with bold garlic, crisp cucumber, and tender chicken. Perfect for summer lunches or quick weeknight meals.


Ingredients

  • 8 ounces dry wheat noodles
  • 3 tablespoons toasted sesame paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 2 cloves garlic, minced
  • 3 tablespoons warm water
  • 1 small cucumber, julienned
  • 1 cup shredded cooked chicken
  • 1 teaspoon toasted sesame seeds

Instructions

  1. Boil water and cook noodles according to package instructions.
  2. Rinse noodles under cold water and drain thoroughly.
  3. In a mixing bowl, whisk together toasted sesame paste, soy sauce, rice vinegar, sugar, garlic, and warm water until smooth.
  4. Place noodles in a large bowl and toss with the sesame sauce until well coated.
  5. Top with shredded chicken, cucumber, and a sprinkle of sesame seeds.
  6. Serve chilled. Add chili oil if desired.
