Description

A vibrant, creamy cabbage salad tossed in a fresh herb-packed green goddess dressing, perfectly crunchy and scoopable for chips, wraps, or bowls.


Ingredients

  • 4 cups finely chopped green cabbage
  • 1 cup finely diced English cucumber
  • 1/4 cup thinly sliced green onions
  • 1 cup packed fresh basil leaves
  • 1 cup packed fresh spinach
  • 2 garlic cloves
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup olive oil
  • 1 tablespoon rice vinegar
  • 1/4 cup cashews or walnuts
  • 2 tablespoons nutritional yeast
  • 1/2 teaspoon salt

Instructions

  1. Finely chop the green cabbage, dice the cucumber, and slice the green onions. Place them in a large mixing bowl.
  2. Add basil, spinach, garlic, lemon juice, olive oil, rice vinegar, cashews or walnuts, nutritional yeast, and salt to a blender.
  3. Blend until completely smooth and creamy, scraping down the sides if needed.
  4. Pour the dressing over the chopped vegetables.
  5. Toss thoroughly until all vegetables are evenly coated.
  6. Let the salad rest for 20 minutes to allow flavors to develop.
  7. Serve chilled with tortilla chips or as a fresh side dish.
