Description

Ingredients

  • 2 large romaine hearts, chopped
  • 1/2 cup shaved parmesan cheese
  • 1 cup croutons (homemade or store-bought)
  • 23 anchovy fillets, finely minced
  • 1 small garlic clove, minced
  • 1 large egg yolk
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 2 tablespoons fresh lemon juice
  • 1/3 cup extra virgin olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F if making croutons from scratch.
  2. In a blender or food processor, combine anchovies, garlic, egg yolk, Dijon mustard, Worcestershire sauce, lemon juice, and a pinch of salt and pepper. Blend until smooth.
  3. Slowly drizzle in olive oil while blending to create a creamy dressing emulsion.
  4. Cube day-old bread, toss with olive oil and garlic, and bake for 10–12 minutes until golden and crispy (if making croutons).
  5. Add chopped romaine to a large bowl and toss gently with dressing to coat.
  6. Top with shaved parmesan and croutons. Toss lightly or leave layered for presentation.
  7. Serve immediately and enjoy while crisp and fresh.

Notes

  • Use fresh lemon juice for the brightest flavor.
  • Anchovy paste can replace whole anchovies for ease.
