Ingredients
Scale
- 2 Large Eggs
- 1 tablespoon Butter or Oil
- Salt, to taste
- Black Pepper, to taste
Instructions
- Heat a nonstick or cast iron skillet over low heat for 1 to 2 minutes.
- Add the butter or oil and let it melt, coating the bottom of the pan evenly.
- Crack the eggs into a small bowl, then gently slide them into the skillet.
- Sprinkle with salt and black pepper once the whites begin to set.
- Cover with a lid and cook for 2 to 3 minutes until the whites are fully set and yolks remain runny.
- Remove from heat and let rest for 10 seconds.
- Carefully slide the eggs onto a plate and serve warm.
Notes
- Use fresh eggs for better structure and flavor.
- A tight-fitting lid helps steam the tops without flipping.
- Cook low and slow to avoid rubbery whites and overdone yolks.
- Season after the whites begin to set to avoid spreading too far.
